Upma, a South Indian dish made up of Semolina (a coarse rice flour). It's usually eaten around breakfast time, but I swear, I can eat this for breakfast, lunch, and dinner. It's one of my favorites. Next time your in the mood for some spice and need a quick fix, try this recipe. It's sure to warm you up and provide you with ultimate comfort.
Malt O Meal (refer to box. Amount depends on how much you are making.)
Onion diced in cubes - 1/3 cup or half a small onion
Tomato diced in cubes- 1/3 cup or one small tomato
Cilantro finley chopped -1/3 cup
Green chilies finely chopped - 2
Dried red chilies -3-4
Salt - per taste
Ginger garlic paste- 1tsp
Red chili powder - 1/2 tsp
Turmeric- 1/2 tsp
Butter - 1tbs
Water (refer to box)
Mustard seeds - 1/2 tsp
Cumin seeds -1/2 tsp
Curry leaves - 4-5
Oil -2 tbs
In a medium sauce pan on medium heat, heat up oil and add in onions, cook until golden brown. Then add in tomatoes, green chilies, cilantro, red chili powder, turmeric, salt, and garlic ginger paste. Cook until tomatoes are mostly pureed and spices are well blended into the tomatoes. Add in dried red chilies, mustard seeds, cumin seeds, and curry leaves. Cook for a minute or so. Then add water and raise the heat, and bring to a boil. Slowly stir in Malt-O- Meal and return to a slight boil. Stir and cover sauce pan and reduce heat to a simmer. Cook for 2 minutes stirring occasionally. Uncover and stir in butter. Serve hot and enjoy!
The recipe above will be good for up to 2-3 servings of Malt O Meal. When making more, just add in a little more of each spice until it is suitable for your taste. I usually eyeball everything when cooking, so feel free to play with it until it approves your taste buds. Oh and btw, you can add whatever you like to this. Extra veggies, meat, whatever. It's very versatile.
